crave killing Energy Balls

You made the cashew /almond milk and now you have a pile of pulp. Don’t chuck it.
There are many uses, this is one.
I’ve searched long and hard for a delicious nut pulp ball (so weird) recipe and tried MANY.
I have beautiful pictures of them all too – but they sucked.
FINALLY!

Right out of the gate it looks like something sinful doesn’t it?

But the only thing sinful is the taste.
There are a LOT of good things happening in this mash up – no guilt here.

stuff you need to do this

Food processor (not a blender – to powerful)
Hands – to roll balls

ingredients

2 cups nut pulp (you can freeze pulp until you have enough)
1/3 cup dates, rough chop
1/3 cup cocoa powder (health food store for the real deal – don’t cheat)!
1/4 cup of nut butter (almond) or coconut butter
2 tbsp coconut oil
1 tsp vanilla extract
1/4 tsp salt
pinch of cayenne (optional)

Optional topping to roll: crushed nuts, cocoa powder, coconut flakes

this is how we do it:

BLEND everything in a food processor (except toppings) til pretty smooth.

ROLL into 1 1/2″ balls.

DIP into toppings.

STORE in fridge for a week (they won’t last that long).

When you feel peckish or hangry and can’t make it to the next meal these are great.
Pay attention to how you feel before and after you eat one. Really be mindful of the calming properties these little darlings have and with no sugar spike rebound.
Great appetite control.
Do a fun experiment and try a donut hole from a coffee shop and see how far that goes.
Your body will let you know.
But I think you already know don’t you…

Not going to make it until dinner? Eat one.
Have to run out the door without breakfast? Eat one.
Long car ride? Take one with you, or 2.
