If you’ve spent time with me (wherever that may be) you’ve had this broccoli salad.
I make it anywhere I happen to be (trailer, boat, bunkie, vrbo) everywhere I go (Canada, Europe, Caribbean) and it adds something special to any meal also satisfies that savory craving with unexpected benefits.
broccoli salad, you complete me
I make this with my tribe and they in turn enrich me with their take on it.
For instance you’ll notice how the broccoli florets are cut long and include the stems.
You see I walked away and let someone else do the chopping and when I came back it was cut into long florets.
I ALMOST said you did it wrong.
Push down that desire to control the situation and chop differently.
Learn from others.
They know stuff too.
This is how I make it all the time now. The stems have mad flavour and stay crispy.
So thank you friend.
But you do you.
My husband only eats the floret – or so he thinks.
I peel and chop the stalk of the broccoli up into match sticks and he doesn’t seem to have a problem with them at all.
He might if he reads this but he’s more into boats and architecture so we’ll see so this might fly under the radar.
Right side is before and left side is after broccoli spa day.
The stalks are even better than the florets!
Just cut the woodsy bottoms off and peel the stock til its smooth.
I cut these into matchsticks and use them all over the place, salads, stir fry’s and bigger chunks for soups and roasting.
Green gold right here!
stuff you need to do this
good knife (I’ve used bad knives and managed so use what you got)
4 cups broccoli, cut to preference
2 pears or apples, cut to preference
1/4 cup red onion, diced
1/2 cup dry cranberries (raisins or blue berries work too)
1/2 cup sunflower seeds (or pepitas – pumpkin seeds)
Crispy bacon (optional)
Hemp seeds, (optional)
1/4 cup apple cider vinegar
1/2 cup olive oil
2 cloves garlic, minced (if you love the garlic taste you can put them through the small holes of planer)
1 tbsp maple syrup or honey
1/2 tsp each salt and pepper
this is how we do it:
CHOP the broccoli, pears and onion up. Set aside.
WHISK all the dressing ingredients in a large bowl.
ADD the chopped veggies to the bowl and toss with dressing.
ADD the dry fruit and seeds.
SERVE topped with bacon or hemp seeds.
I’ve been making this salad for over 20 years. I consider it a part of my heirloom collection.
Everyone loves this broccoli salad, it rarely lasts 2 days.
Never lose this recipe!
Use it as follows:
Lunch just add a protein (or not)
Snack (instead of chips)
