sweet potato Breakfast Patty

One of the biggest hurdles people have going gluten free is replacing bread.
Let’s face it we put everything on bread.
Bread is our vessel for food – you go gluten free, now what.
Fear not there are alternatives.

Sweet Potato slices called toast are not one of them.
Sure they look great on a plate loaded up with avocados and shiny red tomatoes but can you hold it in your hand like, oh I don’t know, toast?! No.
What’s even funner (new word ) is putting them in the toaster – don’t do it!
So as you can tell I’ve tried many different sweet potato ‘toast’ recipes and not only did they disappoint me but some even angered me (cleaning goo out of the bottom of my toaster seriously)?

This easy peasy Sweet Potato Breakfast Patty recipe will hold your food, capture your heart and keep your toaster goo-less!

stuff you need to do this

large baking pan
parchment paper, foil, silpat to line the pan
box style shredder
pastry brush
1/3 cup measure

ingredients

4 cups sweet potatoes, peeled and shredded (approx 2 large sweet potatoes)
1/2 cup almond flour (all purpose gf works too)
2 eggs, lightly beaten
1 tsp onion powder
1 tsp oregano, dried
1/2 tsp pink Himalayan sea salt
1 tsp baking powder
1/4 tsp savoury spice like chile powder, harissa or even garlic
Avocado oil to coat pan

this is how we do it:

PREHEAT oven to 425

COAT the baking pan parchment paper or whatever your using with the pastry brush and avocado oil.
We want that crispiness without frying so we are going to fool them with this method.

PLACE the shredded sweet potatoes in the bowl and evenly sprinkle flour and spices overtop.
MIX til combined.
ADD eggs.
MIX well.

LADLE the sweet potato mix onto the baking pan in 1/3 cup scoops.
SMUSH it down til it’s 1/4″ to 1/2″ thick and relatively even.

POP into the oven for 15 min.


FLIP and bake another 10 min. The top 5 in the picture below are what they look like after 15 min flipped.
The others are waiting to be flipped.

REMOVE from oven and place on rack to cool.

Your food vessels are ready to go LOAD EM UP!

If you can’t get through all of them within 5 days just stack them with some wax paper and freeze for individual use whenever you need them!
