Now THAT’s a close up – don’t you just want to bite into that crunchy goodness?
I love baked cauliflower but I love coated baked cauliflower more cause it really feels like you’re indulging doesn’t it?
These crunchy cauliflower poppers are seriously competing for 1st prize with the original Buffalo Style Cauliflower I posted previously on Knot Anchored’s blog which was a battered version.
this time it’s going to be different
This version succeeds in getting down to that CRUNCH factor and that’s no easy feat considering that cauliflowers are 92% water!
Here’s my secret to crispy baked veg:
When baking veggies at a high temperature open the oven every 5 min or so to let the steam escape or they won’t crisp up!
stuff you need to do this
large baking pan
parchment paper, or foil, or silpat to line the pan
1 large and 2 med bowls
1 head of cauliflower, cut into small flat florets like above for maximum surface area to heat ratio
S & P pinch of each
2 eggs, lightly beaten
1 1/2 cups cashews, raw (not roasted or salted)
1/4 tsp cayenne, more or less
3/4 tsp garlic powder, dried
1 tsp smoked paprika
1/2 tsp pink Himalayan sea salt
Avocado oil to coat pan

this is how we do it:
PREHEAT oven to 425
COAT the baking pan parchment paper or whatever your using with the pastry brush and avocado oil.
We want that crispiness without frying so we are going to fool them with this method.
PLACE the greased pan in the oven while preheating and work on chopping up the cauliflower.
SPRINKLE with a pinch of salt and pepper – give a stir, set aside.
COMBINE the cashews and spices in a food processor until it looks pebbly.
You don’t want the cashews to be too big or they won’t stick to the cauliflower.
PREPARE your dipping station, cauliflorets in one bowl, eggs in a bowl and breading in a bowl.
Let the DIPPING begin!
Dunk the cauliflower florets in the egg til submerged than roll around in the coating.
I like to place the floret in the coating and then spoon the coating overtop til covered.
TRANSFER to baking sheet – no touching!
PLACE in oven and bake for 15 min.
FLIP each cauliflower floret (it’s worth it)
BAKE and additional 10 min.

So many ways to enjoy these.
Add to stir fry.
Make a crispy cauliflower taco.
Snack it up with some sliced green onions and lemon squeezed on top – yes please!
To reheat I fry these up gently in a pan but mostly just eat them straight out of their container in the fridge.
These go fast and are just so darn good!
