chocolate Popcorn bark

What’s better than snuggling up with your favorite person or animal or fluffy blanket and doing an ole fashioned movie night?

NOTE: Choosing to do movie night at home as a couple instead of going out means you’ve REALLY arrived.
You are officially #couplesgoals.

chocolate + popcorn!?

It’s the perfect combination as is but what if we added dried cranberries, goji berries and MARSHMALLOWS!
Cause that’s exactly what we’re going to do here people, prepare yourself mentally as required.

stuff you need to do this

medium pot and a glass or metal bowl that will sit in the pot without touching the bottom
(this is a double boiler home made)
baking sheet pan
parchment paper, foil, silpat to line the pan
rubber spatula
love in your heart and 2 hours before your movie starts

ingredients

10oz pkge of semi sweet chocolate
2 cups popped popcorn,lightly salted
1/2 cup dry cranberries
3/4 cup mini marshmallows
1/2 tsp pink Himalayan sea salt

2 tbsp goji berries, soaked until soft but not plump (optional)

this is how we do it:

Does everyone know to sing the ‘this is how we do it‘ , just checking here we go:

Bring a medium pot of water (1/3 full) to a SIMMER.
When you see the bubbles, reduce a bit more and place the bowl on top ensuring it’s not touching the water and NO water gets into the bowl.
ADD the chocolate in and start the MELT DOWN.
STIR to help the melting go evenly.

Once all the chocolate has melted, remove the bowl from the heat and ADD in:
1 1/2 cups popcorn
all the cranberries
1/2 cup of mini marshmallows

Once everything is JUST combined (don’t over mix) pile everything onto the lined baking sheet.


SPREAD it out with the spatula so it’s 1/2 to 3/4″ thick – there’s perfection in imperfection so don’t overthink it.
It won’t fill the pan.

SPRINKLE the reserved marshmallows and the goji berries (if using) evenly over top pressing them in ever so gently.
TOP off with the salt.

Look how PRETTY!

PLACE in the fridge for 2 hours (probably less but just to make sure).
When everything has set, BREAK apart into random pieces and store in the fridge.

They won’t go bad…even if you hide them behind the lentils and boiled eggs at the very back of the fridge.


These are remarkably satisfying so a little chunk will you do you.
But you do you.
Some extra popcorn for the mindless eating part of the movie couldn’t hurt!
