Meatless hamburger helper is not an awesome name for this amazing recipe.
BUT it describes the taste, texture and satiety quite accurately.
It’s absolutely delicious too. Doesn’t matter if you’re a vegetarian, occasionarian (I made that up) or would just like to take a meat break once in a while.
⚠️ warning: you will crave this regularly once you’ve had it.
What you need
- Large pot
- Fine mesh strainer
- Large skillet
- 1 cup lentils ( red or green or combo)
- 1 1/2 tbsp evoo
- 1 lg onion,diced
- 2 cups, diced any combo of diced celery, pepper or veg hanging out in your fridge
- 4 cloves garlic, minced
- 1 tsp each basil and oregano 🌿
- 1 1/2 tsp salt
- Ground pepper
- 4 tbsp tomato paste
- 1/2 cup dry red wine (optional)
- 3 cups veg broth
- 1/4 ground nuts( use a coffee grinder walnuts or almonds)
- 14.5 oz crushed tomatoes
- Balsamic vinegar or 1 tbsp coconut sugar or both!
- Spiral noodles from Italy ( not the cheapie ones treat yourself)

I don’t know about you but I really crave a good vegetarian meal now and again.
I’ve started to really pay attention to my thoughts and cravings instead of just pushing through.
I listen to podcasts, I listen to other people but I’ve ignored myself for a long time.
Too busy, not busy, too happy, bad mood whatever the reason, I just paid more attention to everything else but my body’s signals.
Well this meal is seriously so good.
You can have it as your main and then if you have leftovers you can serve it as a side for some other meal.

This is also an amazing pantry meal so if it’s too peopley out there treat yourself to an amazing pasta night without going anywhere but your pantry! Always have lentils. Always!
