Pot Luck Rockstar pickled vegetable medley

The mystery of what to bring to and/or serve at BBQ’s and potlucks has been solved and it looks like a bunch of cut vegetables in a bowl.

You will be serving this with EVERYTHING and you will be a potluck rockstar when you bring this dish.

This pickled veg medley is an expanded version of my pickled Red Onion topper which incidentally you can add to almost everything.

Makes a full large freezer bags worth. Don’t worry about that being too much, you’ll use it and it’s pickled so it has longevity!

Zesty and colourful you can include this pickled vegetable medley on a charcuterie board or as a ‘condiment’ with anything grilled.

Equally good served alongside a cream base pasta to balance out the flavour playing field.

Needs 24 hrs in the fridge to marinate so let’s not waste anymore time chit chatting…

what you need

  • Small pot
  • Large bowl
  • Large freezer bag ziplock or glass container


  • 2 cups cauliflower, florets
  • 2 cups broccoli, florettes
  • 1 cup mushrooms, cleaned and chopped
  • 1 red pepper, strips
  • 1 cup green beans, cut up
  • 1 red onion, sliced
  • 1 large carrot, cut in rounds
  • 1 cup red wine vinegar
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 tsp ground pepper
  • 1/4 cup EVOO

this is how we do it

  • Clean and prep all the veg, place in large bowl and set aside
  • Heat and vinegar, oil and spices and small pot just till combined and remove from heat
  • While still warm, pour vinaigrette over vegetables and let marinate in freezer bag for maximum veg to vinaigrette contact for 24 hours

The vegetables will be crisp but seasoned right through.

These are so so so good.
