
A perfect, no mayo, no boil picnic potato salad.
Yup that covers everything!
Start by preparing the potatoes via the no-boil instant pot method here
Combine the following in a large bowl:
- 3 tbsp red wine vinegar
- 1 tbsp evoo
- 1 clove garlic, minced fine
- 2 tsp basil
- 1 tsp grainy mustard
- 1/2 tsp horseradish
- 1 tsp salt
- 1/2 tsp sugar
Add the potatoes in and combine gently.
Add the following:
- 1/2 cup sliced celery
- 1/4 cup green onions
- 1/4 cup red or orange pepper, diced teeny tiny
- 1/4 cup pickles, diced
Give another gentle stir.
Taste for salt level.
And chill for an hour.
