Some are really really good at it like Gwyneth Paltrow (love her uplifting healthy cookbooks) some you just love cause they’re Valerie Bertinelli (grew up with her tv show and in general love her cooking style).
Then there’s the ones who put fun right into the ingredient list like Jennifer Valentine, Cameron Diaz and the star of this post Jennifer Garner ⭐️
This Black Bean and Sweet Potato Chili is from an Instagram post by Jennifer Garner and her ‘pretend cooking show’.
See ⬆️ that’s so real of her and darnit she’s just adorable.
The recipe hooked me because it’s healthy and I had all the ingredients on hand.
Success! It turned out really good!
ingredients
- 1 tbsp evoo
- 1 onion, diced
- 1 med red and green pepper, diced
- 2 jalapeño’s, diced fine
- 3 garlic cloves
- 3 tbsp chili powder
- 2 tsp cumin
- 2 tsp basil
- 1 tsp oregano
- 1 tsp red chili flakes
- 3 bay leaves
- 1 tsp kosher salt
- 1 tbsp sugar
- 5 cups broth
- 28 oz can dice tomatoes
- 12 oz beer
- 2 cans black beans
- lime wedges for individual bowls
Garnish: cilantro, green onions, sour cream, cheese, crumbled nachos
this is how we do it
- Sauté onion in evoo til golden
- Add all the veggies and sauté til tender, garlic goes in at the end
- ADD all the seasonings, stirring 2 min
- add the can of tomatoes, and beer simmer for 15 min
- add in black beans to warm them through ( so they don’t get mushy)

When you go to divvy this up among the bowls using all the garnishes will make this soup amazo.
BUT! You absolutely MUST add the squeezy of lime.

I’ve tried it both ways, without the lime the soup is good, with the lime it’s a whole different fiesta in your mouth.
Feel free to add leftovers to this great base like cooked rice, or chicken.
