SoGood Air fryer Meatballs

Meatballs do not get the props they deserve.

My meal planning brain NEVER picks meatballs and that changes NOW.

So many serving options like:

Spaghetti and meatballs.

Meatball sandwiches.

Meatballs and anything really.

And so many flavour profiles to try.

Today we do the very basic ‘good with anything everyone loves me’ meatball.

Let’s hit it!

Ingredients

  • 1 pound ground beef
  • 1 pound ground pork
  • 1/3 cup breadcrumbs
  • 2 tbsp dry parsley
  • 1 tbsp grated parmesan
  • 1/2 tsp each: garlic powder, onion powder, salt & pepper
  • 1 egg
  • 2 tbsp milk

This is how we do it

Mix all the dry ingredients into a large bowl.

Whisk the egg and milk in a small bowl.

Combine the wet into the dry – fork mix is ok.

Then add your meat. Already combined ground pork and beef or just beef is fine too but will be a drier meatball.

Take all your bling off and get in there!

This is how to get the ingredients really combined.

Squish and bring everything from the bottom of the bowl up – repeat.

We want to make 20 meatballs.

I cannot eyeball meatballs so they are uniform in size but I can do this ⬇️

I flatten it all out on a plate and make it a rectangle (cause my plate’s a rectangle) and it’s easy to divide.

Then I section it out so that I will definitely have 20 meatballs (5 per quarter).

shaping the meatballs

I found making them this shape allows for more even cooking but also maintains a ball shape when done.

  • roll them into a ball
  • flatten slightly between your palm
  • indent the centre with your thumb lightly

They look like sliders but cook up into (flattish) balls after the heat gets em.

350 F or 176 C
14 minutes, flip half way.

Work in batches.

Do not layer on top of each other.

Freeze half for later…

Like there will be any left after you and your whole family ‘quality control’ each person taking one with the rest going towards dinner.

Sure freeze em up!

But seriously they so freeze well.
